When you think of mustard, what is the first thing you think of? The classic yellow condiment that you smother all over your hot dogs? While you are absolutely right, mustard is more than just a condiment, it is also a spice and a leafy green!
I started off by making note of the recipes that I want try over the next couple of months. These include:

Hold up, did someone just say brownies? YES! I was surprised to see a dessert section in this cookbook and amazed to learn that mustard can also be used as an ingredient in desserts. While I was tempted to test out the brownie recipe, I was even more intrigued by the recipe for Honey Mustard Crackers. Let's save the brownies for another blogpost and move right into some cracker fun, shall we?
I wanted to make the Honey Mustard Crackers because:
1. Crackers have been on my bucket list of things I need to make in my kitchen.
2. This recipe uses mustard seeds, a spice that I have never used and I was looking forward to experimenting with it.
After buying mustard seeds from my local grocery store, I was determined to make the crackers the same day. When I opened up the cookbook, I realized I didn't have a couple of ingredients. That didn't stop me! I swapped the all-purpose flour with whole wheat flour and swapped the spices (onion powder, garlic powder, chicken stock) with a Greek spice blend. I also added a little bit of honey to give a hint of sweetness. The result was a delicious whole wheat cracker that is healthy and easy to make.
I was organizing my baking supplies and found a small round cookie cutter, which was perfect for these crackers! It also means that I didn't have to stress out about rolling the dough out into a perfect rectangle (which I can never do by the way!). If you don't have a round cookie cutter, simply roll out your dough into a rectangle and cut into even squares.
Using the small circle cookie cutter made the most perfect shaped crackers EVER. I absolutely loved the way the mustard seeds looked in these crackers.
Seriously, who would guess these crackers were homemade?! I paired the crackers with some of my favourite veggies to eat raw: broccoli and red peppers. The ranch dressing just brought everything together.
After making these crackers, I was sold on adding mustard seeds to my pantry as a staple. Mustard seeds have such a unique flavour with a bit of spice to it. I even added it to the chicken curry I made for dinner last night and it completely changed up the flavour profile. I will definitely be turning to this cookbook time and time again for inspiration and creative ways to use mustard in all its forms.

Honey Mustard Crackers
Makes: 35 crackers
2/3 cup whole wheat flour
1 Tbsp mustard seeds
2 tsp Greek spice blend
1/4 tsp salt
1 tsp canola oil
1 large egg
2 Tbsp water
1 tsp honey
1. Preheat oven to 325oF.
2. In a bowl, mix together flour, mustard seed, Greek spice blend, and salt.
3. In a separate bowl, whisk together egg, water, and honey.
4. Add wet ingredients into dry ingredients and mix dough until it forms a ball. If the dough is too wet, sprinkle 1 tsp of flour at a time until the dough comes together.
5. Roll dough between parchment paper to 1/8 inch thickness. Use a round cookie cutter to cut out circles or use a knife to cut squares. If using a cookie cutter, re-roll scraps and cut out crackers. Repeat until all dough is used.
6. Place crackers on an ungreased baking sheet lined with parchment paper. Bake crackers for 15 minutes or until golden brown.
