If you haven’t figured it out by now, I have a huge sweet tooth. Almost all my snacks are on the sweeter side and dessert is a must almost everyday. After I had my daughter, those sweet cravings kicked in to high gear coupled with a never-ending hunger. Blame the hourly nursing sessions or my love for food, all I knew was I needed something sweet!
The Registered Dietitian side of me likes to look for healthy recipes that satisfy sweet cravings. I was so excited when I saw this recipe for healthy peanut butter cups by my fellow Dietitian Abbey from Abbey’s Kitchen. We all know and love the classic peanut butter cups that come in an orange wrapper but they pack in a lot of added sugar. Abbey blended together banana and peanut butter to skip out on any added sugar, which is pure genius in my books!
Over the past few months I have made so many variations of these peanut butter cups because they are THAT good. Recently, I got a little more adventurous and added chickpeas to the mix! Believe it or not, you couldn’t even taste the chickpeas. It is a great way to add a little bit more fibre and protein to this sweet treat.
For my last episode with Nour Kaiss, I wanted to end on a sweet note and I knew this would be the perfect recipe to share with her. We had a great time making these peanut butter cups and could not wait to bite into them. Check out our video below:
Chocolate Peanut Butter Cups
Adapted from: Abbey’s Kitchen
Makes: 24 mini cups
1/4 cup chickpeas (if using canned chickpeas, rinse and drain)
1 medium banana, ripe
1/2 cup all natural peanut butter, refrigerated
1 tsp honey
2 cups semi-sweet or dark chocolate chips
1. In a food processor, pulse chickpeas until a smooth paste forms. Add in banana, peanut butter, and honey. Continue to blend until a smooth paste forms.
2. Melt chocolate chips over a double broiler.
3. Pour about 1/2 tsp of chocolate into each mini cupcake liner. Add in a tsp of peanut butter mixture and cover with more chocolate. Repeat for each chocolate peanut butter cup.
4. Refrigerate (about an hour) or freeze (about 20 minutes) until set.
