After I devoured my Pumpkin Chocolate Chip Cookies last week, I was looking for another way to use up my pumpkin puree. There are so many possibilities but I decided to try my hand at Pumpkin Pie Granola. The result was a fragrant and delicious granola that reminded me of Pumpkin Pie. We were able to enjoy it throughout the week as a snack and for breakfast. I was so glad I made a batch of this Pumpkin Pie Granola!
I have been making my own granola for about a year now. Ever since then, I have stopped buying cereal. I always thought it would take too long to make my own granola, but once I made it the first time I realized how easy it was! Over time, I have learned some tips and tricks to make the best granola:
Coat the oats evenly with the liquid mixture. Take your time to mix well so that there are no dry areas remaining.
Don't mix your granola while it is baking. A lot of recipes will tell you to mix your granola half way through so that it evenly cooks. This results in granola that is not chunky at all. Let your granola bake without being touched for a chunkier granola.
Let the granola cool completely. As difficult as this is to do, letting the granola cool completely will help create a chunkier and crispier granola as well. Once it is cooled, you can make your granola pieces as big or small as you like.
With these 3 tips, granola making is a breeze in my household. I especially enjoyed this Pumpkin Pie Granola because it had the classic fall flavours I love. For this recipe, I used sunflower seeds but you can swap them with pumpkin seeds if you prefer. I only had sunflower seeds on hand because that's what I usually add to my granola.

As a snack: top 3/4 cup of plain Greek Yogurt with this Pumpkin Pie Granola
For breakfast: DIY breakfast cereal with your choice of milk and Granola
On its own: pack in small baggies for a quick on-the-go snack!

While I was baking the granola, my husband came peeping in the kitchen asking what I was baking. He was a bit disappointed that it was JUST granola because it smelled like Pumpkin Pie! I promised him Pumpkin Pie before the month is over!
Pumpkin Pie Granola Makes: 6-8 servings
Ingredients 1/2 cup pumpkin puree 1/4 cup brown sugar 1/4 cup unsalted butter 1 tsp pumpkin pie spice 1.5 cup rolled oats 1.5 cup instant oats 1/4 cup sunflower or pumpkin seeds
Directions: 1. Preheat oven to 350oF. In a large bowl, add rolled oats, instant oats, and seeds. Mix until evenly combined. 2. In a small pot over medium heat, stir together pumpkin puree, brown sugar, butter, and pumpkin pie spice. Once mixed together, remove from heat and pour over oats mixture. 3. Mix the oats with a large spoon until they are evenly coated with the pumpkin puree mixture. 4. Line a baking sheet with parchment paper and place an even layer of granola on the pan. The granola should be packed together, not spaced a part. 5. Bake for 15-20 minutes, until fragrant and browned. Remove from heat and let cool completely. 6. Once cooled, break granola with hands into desired chunks and place in an airtight container.
